I have been using King Arthur 00 flour for all my pizzas but got tired of trying to find (and over paying) for it. I have been buying 3-5 lb bags of King Arthur 00 Pizza Flour from our local Costco and Walmart, but both stopped carrying it for some reason. I found King Arthur 00 Pizza flour in 50 lb bags from webstaurant. It’s less than 1/3 the cost per pound (including shipping) than what I have been paying.
I estimate a 50 lb bag will make about 130 Neapolitan style pizzas, and I am storing it in an airtight Rubbermaid container. Just wanted to share this since it’s so much cheaper than buying small individual bags.
Bulk is definitely the way to go. I used to be able to get the Caputo 00 from a bulk repackager here in CT; they would buy a 100 pound bag and break it down into 9 pound bags. Again much less expensive than buying a 9 or 10 pound bag of flour.
Anything under about 0.14 an ounce seems to be a better than average deal.
I would underline the part about going to a restaurant supplier for this. You can purchase only the small bags from King Arthur’s site, and it’s really expensive to buy it that way!
You can also get the Caputo type 00 blue in 50 pound bags for roughly the same price. I also invested in a 6.5-gallon Ale Pail with lid so that I can store the flour in an airtight container. It doesn’t all quite fit, so I end up premeasuring 3 or 4 batches and storing them in gallon zip lock bags and use those first.
Note: I just checked my source (Adventures in Homebrewing) and they now make a 7.9-gallon pail which would probably hold the whole bag.
Agree on airtight containers. I have a number of large Cambro containers I use the same way. Any time you move from smaller, grocery-store-size convenience packages to bulk purchases, it’s good to plan how you’ll store those products.
