Time to add the back to the Mattone Barile. It seems like the back should be mortared to the arch, but the instructions don’t say to do this, nor they say not to. Any advice?

Yes, when you set the back wall, you will lay the first course on a layer of mortar (⅜ inch max), and mortar to the arch. Easiest way to do this is to apply mortar to the arch itself, and to point it in from the top and sides.
You will find it easier if you spray the ends of the arch a few minutes before you apply mortar. Mortar will tend to slip off brick otherwise, and the arch brick will be bone-dry by the time you do this.
